Newbie planning big trip

Hi all,
I was hoping some seasoned holiday makers to Orlando could look over my planned itinerary and see if they think there are any issues with it.
Ok so there are
11 of us travelling (9 adults, 2 x children aged 2.5)
8 from UK
3 from Ireland
from 3rd-17th Aug
The UK crowd would ideally like to travel out of Scotland and best and cheapest way I can seem to get flights is them fly Edinburgh to Orlando via Dublin with Aer Lingus and the 3 Irish hop on the same flight in Dublin approx. £810
Then we are spending 9 nights in a villa in Davenport have that booked until 12th August
Then hoping to do a 5 Days Eastern Caribbean from Port Canaveral (Orlando), FL with Carnival
and fly out on 17th.
So my questions are

* where do I get cheapest car hire would be looking for 1 x 6/7 seater, 1 x 5 seater picking up at airport on 3rd returning to camp canaveral on 12th

* where would i get the cheapest transfer for all 11 of us from port canaveral on 17th to orlando international

*where do i get the cheapest universal, disney, seaworld tickets for us (have been looking online but don't want to get scammed). Also anyone know if I can get these discounted through any UK means e.g. Tesco points

*is there outlet shopping centres in orlando near davenport or on that side of the city

Sorry for long post but just want to make sure I amint missing out on something major or that the trip sounds rubbish

What a great trip you have planned

We have used a fantastic company for the last coupe of years that do taxi service&car rental, basically they pick you up from the airport, stop for shopping then take you to your villa, next day they pick you up from the villa and then take you for your car/van hire. I cannot recommend them enough

What kind of shopping outlets were you looking for? There's Florida Mall http://www.simon.com/mall/?id=139 but that's about half an hour away. On highway 27 there is Walmart (my kids love it in there ) and a few shops near Applebys (lovely place to eat for all the family)
