Newbie Needs HELP!

I've been to disney a few times before, but it was with my parents, I didn't have to plan a thing :) So now that I do, I am totally overwhelmed! I have lots of books, but I still figure an acutal person answering questions is a bit more helpful! I am going during free dining, it will be myself, husband, 4 year old DD and 1 year old DS.

Here is what I have planned right now... any input/suggestions whatever is REALLY appreciated :) Thanks!

Saturday- arrive
Dinner- CS at hotel

Sunday - MK
Lunch Crystals Palace
Dinner- Cosmic Ray's

Monday- Hollywood Studios
Lunch- 50s Prime Time Cafe
Dinner- OPEN (CS)

Tuesday - Epcot
Lunch- OPEN (CS)
Dinner- off site

Wednesday- No Park
Lunch- Wolfgang Puck (CS)
Dinner- OPEN (TS)

Thursday- MK
Lunch- CRT
Dinner - OPEN (CS)

Friday- Animal Kingdom - checking out
Lunch- someone told me about a character lunch, I can't find it!

So obviously I need help :) Send it my way... please ;)
 
A little info would be helpful- are you using free dining while you are there? Also (assuming you are using the free dining) are you checking out on the Friday? You mention Wolfgang puck on Wed, is that the express or the full service restaurant? I have some tips based on your dining but they may be moot if you're not using the dining plan.
 
I added more info in. Sorry :) Yes we are checking out on Friday, we are going during free dining, and I didn't know there was a TS wolfgang puck :)
 

And the AK character meal is at Tusker House, if that helps.

Is the Tusker House character breakfast only or does that go through to lunch as well? We love Donald's Safari breakfast, unfortunately couldn't get the ADR the day we were planning AK.

We also really enjoy Flame Tree BBQ which is a CS. :thumbsup2 We often do this as dinner when in AK. Some ribs under the trees ...ahhh I am hungry already!
 
Tusker House character breakfast is breakfast only - lunch and dinner are a buffet. You can also get a lunch package at TH now that ties into particular afternoon showing(s) of the Nemo show - sort of like the Fantasmic package, I guess.

(By the way, I haven't eaten there - just looked at the menus on allears to check for you about the characters).
 
For the non-park day here are some suggestions:

Monorail Resorts: 1900 Park Fare, O'hana, Kona Cafe, The Wave

DTD: Cap'n Jack's, Planet Hollywood

Overall I think it looks like a great plan but here are some dining ideas to help you fill in those holes.
DHS is tough. It doesn't have alot of great CS that being said I would do the ABC Commissary for dinner- I know that alot of people on here seem to complain about it but we have always found it to be a good CS meal( we especially like the Asian salad and the Cuban sandwich)

For the Dinner on Wed. I would suggest 'Ohana, it's at the Poly if you get a window seat you can usually get a great view of the castle. It's our favorite buffet TS at WDW. You Could also check out 1900 Park Fare, its a princess dining buffet.

I would consider doing Flame Tree BBQ on the day you leave which would give you a TS on your Epcot day and there are a ton of amazing restaurants there.

That leaves dinner on Thurs. I would have to say to try either Peco's Bill or Columbia Harbor House. Both are great CS.

We ate there for lunch in Feb. It was great but as you said no characters.
