Newbie needs help

You guys are all so knowledgable. I just took a photography class, so I understand f-stop, ISO and shutterspeed and I am starting to play around with how they all work together. I have a Sony DSC-H10, I guess a bridge camera. I've been mostly playing around in M mode. The one thing I don't get is EV. What is it? I get that is has something to do with how bright or dark the image is. Does it have something to do with the flash. If I am adjusting the f-stop, ISO and shutter speed do I need to adjust the EV? So far I have just left it a 0 all the time. Thanks for all your help. I've been learning a lot from reading through all the different threads.
 
It is exposure compensation. If you are already adjusting those three, you cannot change the EV. It is not available in manual mode. It is basically telling the meter to over or under expose on purpose.
