You're right, there is a wealth of info here. Let's see if we can break it down a bit for you.
For starters, if you're staying onsite, are you on the meal plan? It would cost your family $100 per day. For that, you would get one table service meal, one counter service meal, and one snack per day. For our family it's a good deal.
But if you haven't already signed up for it, take a look at the menus at
www.allears.net and see where you would like to eat. Then call and see how many of those ADR (advanced dining reservations) you can actually get. You may find that you can get enough that it's worth the plan; you may not. Either way, you want to make any ADRs as soon as possible.
OK, next: decide on which parks you want to see on which days. Don't sweat the reports of the crowds this week: Easter, Passover and Spring Break have created the perfect storm of crowds in WDW. Take a look at the crowd calendars at
www.touringplans.com and see which parks are less likely to be crowded for each day of your stay.
While you're there, take a look at the free sample touring plans. That will help you decide whether you want to have a touring plan. (Remember, having them doesn't compel you to actually follow them.) You can either subscribe to get the full set at the site, or buy the Unofiicial Guide to WDW for more touring plans.
Finally, the most important piece of advice: plan to get to the parks at rope drop each day. You can sleep when you get home-- or mid afternoon. But you will have a much better trip if you're there before the parks get too crowded.

PS- one more tiny tip: go to the family forum and sign up for a Fairy Godmother at the very top of the list of stickies. Someone will volunteer to send your kids a postcard from WDW in advance of your trip, anticipating your arrival. You, in turn, sign up to to the same for some other family when you get there. My kids were thrilled with their postcard last year!!!
