when will restaurants like V&A and CA grill open for booking? Does anyone remember timing from last year?

Wondering if CA Grill will do New Years Day brunch?

And is CA Grill sold out for brunch on 12/30 or are reservations being held back for a special holiday brunch?

Finally, do most Springs restaurants just do normal menu? Many are bookable now so just curious if it’ll change to some special menu with a pric fixe sort of pricing.

Last year many of the DS restaurants we ate at during the holidays offered at least a holiday dessert.

California Grill brunch for 12/30 doesn't look like it's open yet. When you look at the date it only has dinner times listed. I've been considering going there for brunch that day and have been looking since my window opened. I think the California Grill only does a special event on 12/31 so I feel like the Brunch would allow you to go up and view fireworks on 12/30, but its been years since 12/30 fell on a Sunday so I'm not sure what their plan is.

The Countdown Experience
Starting at 8:00 PM on December 31, 2018, Disney Countdown to Midnight gives Guests like you the opportunity to welcome the New Year at an extraordinary soirée held within the convention center at Disney’s Contemporary Resort.

The fun begins as you head to the heart of the party in the Fantasia Ballroom, where you can indulge in an assortment of libations—including adult beverages for Guests 21 years of age and older—before moving and grooving to dance tunes from our interactive DJ, featuring music spanning from the ‘60s to today.

Then, it’s time to marvel at a stunning display of culinary sorcery, as the chefs create incredible “cheftainment” behind animated shadowboxes. You’ll delight in seasonal bites from such signature restaurants as California Grill, Flying Fish Cafe, Jiko – The Cooking Place and Narcoossee's, before you’re invited to soak up the high-energy sounds of the New Year’s Eve Bash Band.

Later, stroll outside to the Porte Cochère to sip champagne as the famous New Year’s Eve fireworks spectacular lights up the night from Magic Kingdom park!

Throughout the evening, you can capture memories with a variety of themed photo ops and backdrops.
