The dining rotations are set for each cruise. Every reservation is assigned to one of the rotations. You can call DCL and request a specific rotation, but it's not guaranteed that you'll get it. Most time such requests are honored, but not always.

You can only request one of the already set up rotations, you don't make up your own rotation to request. For example, a 4 night Dream cruise typically has a 1223 rotation. The order of the MDRs is Enchanted Garden followed by Royal Court followed by Animator's Palate. 1/3 of the passenger complement is assigned to begin their rotation in Enchanted Garden, another 1/3 in Royal Court and the last 1/3 in Animator's. So the rotations for a 4 night Dream cruise, typically are ERRA; RAAE; AEER.

My concern is from looking at the menus, I'm worried my picky husband might not like the choices at some. Any helpful thoughts on this?

Will he eat more basic food? All the menus have what they call "Lighter Fare". Basically chicken, fish, or steak (broiled or baked), steamed veggies, rice, or baked potato.

He can also order off the kid's menu, if that appeals more.

That is great to know. Thanks!! Is the lighter fare offered at all restaurants?
 
Yes, each MDR will have the "lighter fare" section usually right underneath the main entrees on their menu. Like Shmoo said, not tons of variety, but plain enough for simpler palates.

You can also ask your server if the kitchen can leave any offending sauces, garnishes, gravies, etc. off the main entrees. I've found they are happy to work with you if it's possible.
 
I find the 'lighter' quite amusing the 'lighter' meals were always larger than the main menu but equally nice!
