New Panini press...looking for recipe ideas

I just bought a Panini maker and used it for the first time lastnight!! I fell in love!!! It came with a booklet with some recipes but they seem to be very fancy recipes.
For dinner lastnight I heated some store bought meatballs in sauce and then sliced some Italian bread, sprinkled some mozzarella cheese and then sliced meatballs. It was great!!

MY question....does anyone have any other SIMPLE ideas for me??
 
I love Paninis and make them all the time. I keep my ingredients to a minimum and use the best possible. My favorite:

use a loaf of crusty bakery bread (country bread, cibatta) and slice it 1/2 inch thick. add sliced mozzarella, sliced tomato and fresh basil and fresh cracked pepper. You can also add a slice or two of prosciutto, or substitute the basil with arugula.

Also for people that do not have a panini press you can make one easily. Use a saute pan, put your sandwich in and put a plate on top of the sandwich and weight it down with a tea kettle filled with water for weight. Then just turn the sandwich over to toast the other side

I watched Giada De Laurentiis make Croissant Panini today.

4 croissants, sliced in 1/2 lengthwise
4 ounces smoked Gouda, grated (about 1 1/3 cups)
8 teaspoons grated Parmesan
4 ounces Genoa salami (about 24 slices)
5 ounces arugula

Heat a panini grill. Divide 1-ounce (1/3 cup) smoked Gouda between 1 top and 1 bottom of a croissant. Sprinkle each half with 1 teaspoon Parmesan. Top each side with about 3 slices of Genoa salami (about 1 ounce of salami per sandwich, total.) Top 1 half of the sandwich with a small handful of arugula. Close the sandwich and continue with the remaining sandwiches. Grill the panini until the cheese melts, about 3 to 4 minutes.
Cut each sandwich into thirds. Place the remaining arugula on a serving platter. Place the warm sandwich slices on the arugula. Serve hot.
