New here and first trip to Disney

Hello everyone! We are going to DLP next week! We are surprising our 2 daughters, ages 4 and 6, and I am just excited as they will be! We will be arriving in the area Tuesday night, the 25th, and heading to the park Wed-Fri. Growing up in the northern U.S, I never made it to any of the Disney parks in the US, so this is my first experience too! I am trying to get everything prepared, and don't want to miss anything important. We are renting an apartment outside of the park, and buying annual passes when we arrive. So, since I am not purchasing anything at the Disney website, is there info I can receive elsewhere? I would think you would get some type of welcome pack or something by purchasing a package.
Here are a few questions:

Reservations for restuarants: When is the best time to do this? and how early can we do this? Is lunch with the princesses cheaper than dinner time?

Buggy's: We also have an 11 month old son, and we will bring our own buggy. I would imagine you cannot bring them in line for the rides, so where do you leave them? Any chance of them "walking" away?

How do you find out about the times for the different shows and parades?

Anything else we need to know as far as the English speaking attractions? We are just learning our German (we will live here for 3 years and just arrived) and haven't started French yet! I have read you can get headphones for certain events, and that Lion King has an english showtime. Anything else?

Buying passes: It was recommended to buy one Dream pass and the other ones Fantasy to get the better savings on the Dream pass. Wouldn't that apply to just that card holder? For example, my hubby gets the Dream pass but me and the girls have Fantasy. Can we use just his pass to get the better discount at shops and restaurants, or would it only cover his portion of the bill?

O.k, that is it for now. I am sure I will have a million more questions as we get closer!!

ONE MORE THING: Is there any holidays next week that would affect the crowds at the park? We will be celebrating Thanksgiving, but I think we are good in that area!! :)
 
im sure u will have no problem with regards to not speaking french. i do not know any french but encountered no problems at all on my last trip. all signs are in english and every cast member speaks good english

with regards to meal reservations you can call the restaurant reservations number and book ur meals before u leave home

to find the times and schedule for the parades, shows etc. just go on disneylandparis site . go to calender and there u will find the schedule according to your dates.

Thanks so much everyone! I have been to the DLP website daily, but for some reason, it loads sooooooo incredibly slow for me that it is hard to find a ton of info! If I sign up for the newsletter, will they email a bunch of helpful info?
 
I wouldn't have thought so to be honest - even when I do book through Disney direct, I don't get any specially useful information until I check in at the hotel - thats when you get the park maps, programmes, etc.
