This is the first time we've gone with the DDP and I'm going crazy with all the choices! I can't ask for family imput, the kids don't know we're going and my husband doesn't care as long as he has food.

So these are what I have so far, only thing I'm worried about is how many meals we have at Epcot.

Coral Reef Restaurant - dinner
The Crystal Palace - early dinner
'Ohana - breakfast
1900 Park Fare - dinner
Tusker House Restaurant - lunch (Nemo package)
Chef Mickey's (will probably cancel)
Akershus Royal Banquet Hall - breakfast
The Garden Grill Restaurant - dinner

Anything you would change or can't miss restaurants?

Not a fan of Coral Reef, but then again we live so close the Aquarium Restaurant that it just seems pointless.
Crystal Palace - yum and good characters. We do prefer breakfast here though.
Ohana - have not been yet, is planned for this Thanksgiving. I have heard great things.
1900 Fare Park - Great characters, food is okay.
Tusker House - We did this for breakfast and it was our favorite.
Chef Mickey's - Did not enjoy at all. I wouldn't bother.
Akershus - Again, we haven't tried it yet. It is also on the schedule for Thanksgiving.
Garden Grill - 2nd favorite meal of the whole trip.

Sounds like you did a great job overall. If you are looking outside of Epcot, I would consider dropping Coral Reef and looking elsewhere. If you want something similar to Chef Mickey's, you could opt for an early breakfast at the Cape May Cafe and then head over to Epcot or Hollywood Studios.
 
I think you made some great choices. I would cancel Garden Grill over Chef Mickey's though. My kids love the character interaction and the food is good. I know CR gets some bad reviews but we really like it and the kids request to go back too.
 
I switched Garden Grill for a later Chef Mickey, hoping to make it to the midnight showing of Harry Potter later that night!
 

From our trip last June with DD6 and DS8 at the time...

Coral Reef - didn't try but have it booked for January
Crystal Palace - haven't tried
'Ohana - ours was for dinner but we loved it and have booked again for Jan.
1900 Park Fare - we loved this dinner - the characters were great and food was good; we almost booked again but too many others we want to try.
Tusker House - we had breakfast here and loved it - fave breakfast of the trip.
Chef Mickey's - did not try and we're afraid of the reviews so still not booking it this time.
Akershus - DD's tie for favorite breakfast, DH skipped it so I was happy with the family style main meal.
Garden Grill - we enjoyed this dinner and had it re-booked for this trip but have switched it out for Coral Reef because DS is an under the sea freak (hopefully not a mistake)
