Here are a couple of easy recipes:
Cheesy Half Moons
1 pkg. Pillsbury Grands Corn or Buttermilk Biscuits
1 cup. shredded cheddar cheese
1 can diced green chiles, drained
2 tablespoons each of cilantro and green onion
Mix together the cheese, chiles, onion & cilantro with a dash of salt. Cut each biscuit in 1/2 and flatten each piece into a 3 1/2 inch round. Spoon a tablespoon of cheese mixture on each round, fold over dough and seal with a fork. Shape dough into a crescent or half moon shape and place on a lightly greased cookie sheet. Bake at 375 for 15 minutes or until golden brown. (These are really delicious with the corn biscuits, esp. w/margaritas!)
Crab Rangoon Dip:
1 8oz block softened cream cheese
1 can crabmeat, drained and picked over for cartilage
Mix cream cheese & crabmeat. If you like, add a few drops of Tabasco or a small amount of green onion. Put in an ovenproof dish and heat until just bubbly (a minute or two in the microwave or 5-10 minutes in the oven) Stir and serve warm with townhouse or ritz crackers.
Shrimp Dip
1 8 oz. block softened cream cheese. (Make sure it's very soft, otherwise you'll get lumps.)
2 small jars of shrimp cocktail in sauce (or 1 lg. jar)
Mix shrimp cocktail with softened cream cheese. (I use an electric mixer, and whip the cream cheese untill smooth, then add the shrimp.) Serve with Bugles or potato chips - but Bugles really are best with this! This is so good and easy I usually double the recipe.
Feta with Honey (this goes well with wine)
Take a whole block of feta cheese and cut into cubes. Place on a nice plate and drizzle with honey. Put toothpicks in some of the chunks. Have extra toothpicks on hand also. (I just think it looks better if it's not a sea of toothpicks!) Good served with triangles of pita bread and some olives on the side.
Jazz up storebought olives (in oil, not the canned kind) by heating them just before serving. Heat them on the stovetop along with some orange or lemon zest and a garlic clove, maybe some rosemary or thyme if you have it and you won't believe how good they are. A little extra oil in this mix is great too, so you can dunk pita or crusty bread chunks into it. Or an olive oil dip by itself is very good and so easy - just take a shallow, pretty dish and fill it with good quality EVOO that has been heated with: red pepper flakes, garlic, parmesan cheese, salt, rosemary/oregano/ basil/thyme - any combination of these items would be good (although I'd use only 1 type of herb probably!)
I make a bagna cauda which is delicious too with bread and/or raw veggies for dunking. I don't like anchovies, but I do love this stuff and if you have any leftover it's terrific drizzled over potato salad, mashed potatoes, steamed broccoli, or sauteed spinach. I might use more garlic b/c I love it, but this is probably good for a mixed group!
Bagna Cauda:
Take 1 stick of butter, melt over low heat. Add 4-6 cloves chopped garlic and 1 can of anchovy fillets. Saute over low heat, stirring occasionally, until the anchovies have dissolved. (Do NOT let the garlic brown!) Stir in 1/2 cup olive oil and heat through. Serve warm with good crusty bread and veggies.
