I'm subbing for the Destin info since that is where we are headed this year. For the yolo boarding, is that something that inexperienced people can pick up pretty quickly? How about kids (7 and 10)?
For the Gatlinburg trip, consider whitewater rafting. We have taken the kids the last 2 years and they love it! I'm not sure what is available in the immediate area and you have to look at if your kids are old enough (depending on the river). We stayed in NC last summer and traveled back over to Hartford, TN where there were rivers for our 6 year old.
We also love to go through the Smokies from the Gat. area and go to Asheville, NC. The Biltmore mansion is there and it is a nice town. About 2 hours away (I think).
Get your kids National Park passport books (about $15). Then at all the visitor spots (Nationwide), they can stop and get it stamped (for free). There are also collector stickers you can buy. Kind of a fun souvenir that we have used for several years.
We also enjoy Dixie Stampede. Well worth going at least once even though it is pricy.
