Need some quick help w/ fried chicken

Okay, so I have somehow never made fried chicken. Always been scared to try, LOL. But I promised DS, so I'm about to fix some.

The recipe I have calls for "buttermilk baking mix." I have regular baking mix, a la Bisquick, and I have buttermilk pancake/waffle mix (complete.) Which one am I supposed to use?? :confused:

Any help for a kitchen idiot appreciated. :goodvibes

Wow, all you needs is some flour,salt,and pepper. I sometimes dip mine in milk with an egg mixed in it or buttermilk if I have any. I have NEVER had chicken fried in Bisquick, that is odd, but then again, I have never used a recipe to fry chicken either :confused3

Whatever you use, dip the chicken in flour or bisquick first, then in something wet, then back in the dry ingredients, it makes for a better crust.

Self-rising flour is best, it makes a better flakier crust.

flour, salt, pepper, and a touch of cayenne in a bag. Eggs, milk, and salt & pepper in another bag. Drop couple pieces in liquid, then dredge in flour mix. Drop into oil. Do not mess with chicken for 6-8 minutes if oil at 350. Let the mix crisp up. Flip to cook other side.
 
Soak chicken in buttermilk for an hour, cover with a flour, pepper & Salt mix (you can add other spice and herbs as you please) and fry...

So much better then Bisquick

A little late now but maybe for next time:
the key step is to make sure the oil is hot before you put the chicken in to cook. Gram always tested it by wetting her fingers and flicking them over the oil... don't put it in until the oil pops when you do this (stand back). I use my electric skillet,for an even temp... usually 350.

Then when it's done pour off just the oil that's left and make gravy in the pan with what is stuck to it (I add cold water shaken with flour salt & pepper) then when it starts to thicken add about a cup of milk and stir, stir, stir.
