I like to use extra tomatoes to make bruscetta. It's really easy:
chopped fresh tomatoes
a couple of cloves garlic, minced
drizzle of good quality extra virgin olive oil
chopped fresh basil (or use dried, but fresh is better)
drizzle of balsamic vinegar
salt and pepper to taste
That's all there is to it- let it sit for a while in the fridge, then spread on crustini. Yum- if you are a tomato lover, it is heaven!
