Can someone please let me know where I can get the best set up for 8 adults who want to be able to visit and do the parks together. What resort has accomodations for larger groups?

Not sure except getting the rooms in the same resort. The only accomodation, I think, that holds 8 adults, would something at a Disney Vacation club resort. The 2 bedroom might, but the Grand Villas definitely hold 8. If you wanted to stay on the property, you could use the Search feature here and try "Grand Gatherings" and see wht you get. Or, go to the official web site and see what Grand Gathering info you can get. I'm not sure if 8 qualifies.

A two bedroom at a DVC resort would definitely hold eight people - 2 in the master bedroom, two on the sofabed in the living room, and four in the second bedroom. Renting points from an owner will be cheaper than booking directly with Disney, but you can book direct if you want to.

Of course, you could always book a suite and connecting room at one of the deluxe resorts. That can get a little pricey. You could book a Family Suite at the All Star Music Resort or an Excecutive Suite at Coronado Springs, and an adjoining room (not sure if they have connecting rooms to those suites), which wouldn't be quite as expensive. But you still run the risk that your two rooms won't be together.

Another option would be to stay off site in a rental condo or house. This would be your most economical option.
