Someone posted a recipe where you melt cheese in the oven and let it cool - it becomes like a cracker. Does anyone know what I'm talking about? I'm not even sure if it was here or on the recipes board, but I think it was here. Any suggestions?

All I know is to use shredded cheese. I just put shredded cheese on waxpaper on a cookie sheet and bake them until the edges start turning brown.

I also have used this method to make a "bowl" for a quasi taco salad, still working on that seasoning though.

Just bake a big "spot" of shredded cheese and put it over an upside down bowl to cool. Use enough cheese and it will be solid and you can use it as a bowl. Then you get to eat the bowl as well as the salad :)

I don't know of any real recipe for this, though.

CHEDDAR CRACKERS

1/2 cup butter
1 1/2 cup protein isolate (soy or wheat)
1/2 tsp salt
1 tsp baking powder
2 cups grated cheddar cheese
2 tblsp sour cream

Put the ingredients into a food processor and set on dough cycle. Roll into two rolls (like refrigerator cookies) and wrap in plastic wrap. Refrigerate for about 2 hours. Slice about 1/8 inch and place on parchment paper or aluminum foil. Bake at 400 degrees for 10 minutes. Peel off paper and place on paper towels to cool.

estimate 9-10 dozen crackers

You can do it in the microwave, too...

The Deluxe American cheese works the best. Take a slice, break or cut it into 6 pieces. Line a microwave-safe plate with parchment paper (yes, it's really necessary). Put the cheese slices around the outside of the plate, with plenty of melt room in between. Microwave on high for 2-3 minutes... you want the cheese to puff up and brown slightly, or they won't cool into a crunchy chip. When they've got brown spots all over, they're done. Remove from microwave and let cool... peel off parchment and enjoy. You can reuse the parchment paper.
