Need Ideas on What to Make for Office Beach Party

Our office is having a luncheon "Beach Party" theme and I am looking for suggestions on what I could bring that would have a beach theme. Others are making the usuals salads, barbecue, etc. Any ideas with a beach theme for dessert -- or anything for that matter? Thanks in advance.
 
You could make a ocean jello dessert. Get a big glass bowl and fill it up with blue jello, then dunk in gummy fishes and sharks to make them seem as if they are swimming.
 
How about a "sand pail" version of the Flower pot pudding desserts?
Use a big, clean sand pail and plastic shovel (beach toys) instead of a flower pot & spade as your serving bowl / serving utensil. Your "sand" would be crushed graham crackers or vanilla wafers instead of the crushed oreo "dirt".

Another easy water-themed appetizer: use blue food coloring to tint spreadable cream cheese. Place it in a serving bowl surrounded by the large-sized Goldfish crackers. This was a suprising big hit at my DS's last birthday party.

What about a beach scene cake? I've seen square cakes iced in blue, the bottom half covered in graham cracker crumbs (the sand), little bikini's piped onto Teddy Grahams that are sitting on the sand under drink umbrellas, surf boards cut out of fruit leather, that kind of thing...
 
One of my favorite desserts when I go to a tropical island is Key Lime Pie ummmm

I 2nd the vote for Key Lime Pie. That's the first thing I thought of when I read this post. All the other suggestions are awesome. I
really like the idea of making a dump cake using a sand pail. Great idea! .
Someone else is probably doing this but a watermelon boat is always a big hit for something like this. Aren't there some gummy bears, goldfish or something like that that are sharks?

Funny..... I made a cake like that one for my DD's b.day last year. Got the info from Family Fun.com I believe. My recipe instructed me to frost inside the "pool" area before filling with the jello. I was so afraid it would leak! But it turned out fine. I made mine like a jungle watering hole (double layer round cake with irregular "pool" shape in top) surrounded by plastic jungle animals. It came out great and was relatively easy. Even had a friend of DD's ask if I was making that "cool cake" again this year! ...................P
