Need idea's for a lunch buffett

For the welcome party, we are having a lunch buffett at Narcoossee's and then heading over the MNSSHP. We wanted to do a BBQ type thing but they will not use a real grill to cook the burgers on. I am not fond of hamburgers sitting in hamburger water, so we are trying to think of something else.

I want something not to rich or heavy, because people will be going on rides and such all night. I don't want any upset stomaches because of the food.

I thought about doing some kind of build your own sandwich bar, but wonder if that is to cheesy. I would LOVE to just rent out The Plaza and let the guests order what they want. We love that place and think it would be a great place to start the night. But I doubt they would let me do that.

Any ideas?

What about a build-your-own panini action station? Hot sandwiches might seem slightly classier than cold ones, especially if there were a ton of fun mix-ins and different kinds of bread that people could try.

Or what about a seafood theme in keeping with the decor? Sure, it would be Disney Catering making the food, not Narcoossee's, but you could do something like a clambake or have lobster rolls and fish 'n' chips.
