Need help with spritz cookies...

What temp do you have your spritz dough at before you put them through your cookie press? I had a lot of problems with them last year, the cookies wouldn't "DROP" off the end. However, I don't remember if my dough was too cold, or too warm. Maybe too stiff?


Any suggestions would be very helpful!

I think it depends on the dough.
I have loads of recipes and just glanced at some of them.
Some say Do Not Chill......others say chill. :confused:

I usually only make a "plain" dough, do not chill and have a knife handy to "help" the dough out.
 
I'm getting ready to make spritz cookies either tonight or tomorrow. One thing I have done in the past is to make several batches of the dough, refrigerate it usually overnight & then bake all the cookies in one session. I'm pretty sure if my spritz dough has been too warm, it gets sticky. I like to make different colored cookies like green trees, red flowers, etc.

Also, I try to color coordinate the flavorings of my Christmas cookines :) - like green almond flavoring, red anise flavoring, etc. I have a friend who is allergic to nuts. I try to make any cookies without nuts first, so I don't accidentally contaminate a recipe with nuts.
 
Dough needs to be soft enough to squeeze through the opening with out undue pressure - if it's too cold, it becomes very stiff.

The important thing is the temperature of the UNGREASED cookie sheet. If the sheet is too warm, the cookie won't cling to the sheet and pull off the press. Here in New York State, I put my cookie sheets on the front porch between turns in the oven so they are sufficiently cold.

Put the end of the press flat on the cold sheet and turn enough so the cookie touches the sheet and squishes out a little to the sides. Stop turning (or squeezing depending whether it's a screw or a trigger) pick the press straight up and the cookie should adhere to the sheet.

I can never get the danged dough out of the machine. Last year DD and I got so mad, we just dumped the whole load of it. Well, not before helping ourselves to some samples....;) (Sorry if that grosses some of you out....)
