Need Help with Plans

I am going with my 70 something Mom from May 2-7 with Park Hoppers (Can't choose non-park hoppers/water park on Disney Salute tickets). The flight arrives late on the 2nd (8:30 PM) and early enough on the 7th where those won't count as park days. This is what I'm thinking about plan wise and specific questions food and plans wise.

May 2nd Arrive 8:30 PM, Arrive about 10 PM To POFQ. Get the scooter and luggage into room, get unpacked and get to bed.

May 3rd Magic Kingdom 9 AM-11 PM
Lunch 1:25 PM Be our Guest (new restaurant for both of us)
FP + Priorities
Seven Dwarfs Mine Train
Haunted Mansion
Meeting Tinker Bell (Mom loves Tinker Bell)
Dinner will be where ever we are at that point in time

May 4th Epcot 9 AM-9 PM
Lunching around Flower and Garden

FP+ Priorities
Test Track (mom will skip)
Spaceship Earth
Meet Disney Pals

Question One: What would be a good QS place for Dinner? Thinking about Illuminations for a night time spectacular and will both want a .

May 5th Hollywood Studios 9 AM-8:30 PM
Starting out at Disney Springs for Lunch and Shopping
Lunch Morimoto Asia 12:30 PM

FP+ Priorities If we go
Toy Story Midway Mania
Great Movie Ride
Star Tours

Question Two: Would we get to see the major shows (not counting Disney Junior), Launch Bay and get a few rides in if we do it from 2:30 PM-Close? We would forgo Fantasmic due to seeing it at DL a couple years back.

May 6th Animal Kingdom 9 AM-6 PM

FP+ Priorities Total Guesses because this is Mom's Birthday and she makes all decisions that day.

Question Three: Would it be better to do DHS with 11 PM hours to see Fantasmic on this day? The big question is would this be pushing Mom too much even with an ECV.

One other question: Am I making the choices correctly on the FP+ thoughts? I have to balance a 70 something and my needs to make this as fun as possible for both of us.
 
Your FP+ choices look fine to me, EXCEPT.... you can't get FP+ for both Toy Story Mania and The Great Movie Ride (they are both "Tier 1").

Unless you do Toy Story Mania right at park opening, you'll want FP+ for it for sure.

I don't think you'll have any trouble seeing the HS shows in the afternoon, since with Lights Motors Action ending in April, it's really only the Indiana Jones Stunt Show and Beauty and the Beast show that you'll need to fit in.
 
I would not do the late day trying to fit in F!. Your plans look great to me.

As to QS at EP for dinner, you will have spent enough time in World Showcase by then to know what you might want. The QS eateries around the WS are all really good, except maybe China which has your normal Chinese take out. It doesn't taste bad; it's just not as unique as some of the others. Morocco and Japan are our favorites.
 
The dinosaur ride in AK can be back jolting, how is your mom's back?

Try the spare ribs when you are at Morimoto's,the best I ever had!

At EPCOT your mom is going to love all the flower gardens!

The Dinosaur ride will jolt you around quite a bit. Your Mom may not be comfortable with that.

At Epcot we tend to eat at the American Pavilion. We are picky eaters I know we will all like it. I have not tried any others. Your plans look good to me. I would defiantly get Toy Store Mania FP. The great movie ride the last time were their was easy to get on without a fastpass. Like the previous post Dinosaur is very jerky and bumpy. Make sure your mom will be able to handle that before you go on.
