i made a batch of oatmeal cookies the other day and they came out very soft. I HATE soft cookies like them crisp and crunchy. Is their a foolproof method to getting a cookie crispy? TIA Marianne
Did you use granulated sugar, light brown sugar, or dark brown sugar.
Granulated sugar will make crisper cookies. Brown sugar will make cookies that are more moist; dark brown more than light brown because of the greater moisture content (molasses).
Unless you are a very experienced baker, I wouldn't try messing with the proportions of sugar on my own. Instead, look for a similar recipe that has smaller proportion of brown sugar than you may have used and see how that turns out.
You can also try to slightly overbake the cookies.
I think I put less sugar in the ingredents wich probably changed the texure of the cookie. thanks again. will try again with the right amount sugar.

I would but hubby ate them all with me having to eat about 4. I guess thats a good thing cause if they were crispy I would have eaten more. I did put in the baking soda & powder, I think it was the sugar(not enough) that made them soft. thanks for your help..Marianne
Alton Brown did a Good Eats episode (Food Network) on cookies and I remember he listed out some minor swaps to do to get soft, crispy, etc, cookies. Check out foodnetwork.com and you might find this info.
