Need help please! Deep Sea Fishing recommendations?

Hello fellow Disers! On our next trip, I would like to surprise my dh with a fishing trip. I am willing to go to ft. Myers beach through Clearwater on the gulf side. Any recommendations? I would like something comfortable for me to go along for the ride, that's not just a fishing/speed boat. Is there good fishing from a pier or dock? Any advice would be greatly appreciated!
