need help picking when to go

We've been in the fall & summer. We've done Mickeys not so scary halloween, and Mickeys Very Merry Christmas. We've gone in beginning of Oct. - and early and Mid Nov. late June and late July.
DH doesn't do to good with huge crowds. We did Jersey week and we both thought that was doable, but would rather the Oct crowd level.
Now, we are thinking our triplets bday is end of March & would like to surprise them next year with a bday vacation. Then we play with the idea of going Easter break (even though the crowd level will be high - is Easter season extradinary?). Our other daughter is an August bday how bad are the crowds & weather in late Aug.?

So based on crowds & weather when shoud we go? late March, late August, February vacation week. Or should we stick to our fall trips. and why???

I've gone all of those times and of course had fun all of those times, but the February trips are the best. The weather is starting to be more reliable and the crowds aren't as bad.

The crowds aren't all that bad end of August either, and some people swear by it, but the 2 times we went the weather was so awful I swore never again!!!

Having gone traditionally when schools are closed, I am a teacher. I would go late march if I could. In March, the weather should be warm enought to swim, it was when I was there last week, spring breaks should be over, and it would not be too hot.
