Need help deciding what to do....FAST please

Getting ready to book....OK, I recieved the e-mail with the pin. If I book using that code, is it possible to add the dining and tickets right before we leave, so I do not have to pay for them upfront(has anyone else done this, and how did it go??)...this is a total unexpected trip, but DH said I could take the kids for Christmas, so would WDW allow me to do this, can I add the dining to a room-only with a code..hope I am making sense ??? Any info wold be greatly appritiated.

The CM with whom I spoke last night said I could not add the dining package to my room only reservation when I asked about my email pin vs. the YQE code...
