Need help deciding on Arrival Day plans

I would make sure you get to visit the World Showcase in Epcot at some point during your trip.

Personally, we're doing HS on our arrival day and probably aren't going back. Just not enough to do. We'll knock out RnRC, Toy Story, Star Tours, and Tower of Terror and probably bail after that. We have hoppers so if we feel we missed something we can go back, but we aren't making that park a priority.
This is our plan on our first day to then we are hopping to MK.

We'll probably just do HS then dinner at Whispering Canyon (we're staying at VWL) or Disney Springs. We have 4 more days afterwards so we're knocking out HS and getting to bed early so we can hit the next 4 days hard.

We tried to do MK on arrival day last time and couldn't even make it to Wishes. We were both so exhausted.

Last year we went to HS first day and did the dessert party. So we made it until closing. I think being so excited to be at Disney kept us going until our heads hit the pillow lol
This year we have a dessert party planned at MK then we will go to our resort.No rides that night.
 
I have two boys too. We are doing the same as you, but our 6th day is HS again. Because they are boys, and love star wars. We have never been to Epcot, and may end up missing a lot of it, but then next time, I might just say, Mommy is going to spend two days there. If you guys and dad want a boys day only at hollywood studios, let's do it. Otherwise, we need to work the budget for an extra day. This will be our first time doing 6 days, and HS has always been 2 days for us in the past, but to make up for it we skipped Epcot. But now that I know how awesome the shopping it, that's changing this trip.
 

Play bus stop roulette and get on the first bus to arrive. I'm assuming there won't be a MK bus since you can boat there but if there is, skip it. You have hoppers so if the park you end up at is too crowded, hop on over to another one. No you won't have FPs in advance, gasp, sin I know but you can make them on the bus on the way to the park or actually do stand by line. We rarely book FPs in advance and never have any problems either booking them on the bus or doing stand by and booking some while in line. This method kind of forces you to slow and down and kind of stop and smell the roses instead of running from ride to ride.

Yes, this trip is for my 40th birthday and they're already doing a breakfast at CRT, so asking for an extra day at Epcot might be pushing it! I like the idea of spending some time leisurely walking through Hollywood the first and second days. Especially after seeing the recommendation that Food & Wine at Epcot on a Friday night might be kind of chaotic, I think I'll stick with Hollywood. There's always next time. Or if there's one day we don't spend as much time at MK or AK, we can go there.
 
We are 'raring' to go when we get there (usually set out about 'noonish') so we always hit MK first - have to have our 'fix' of a warm cinnamon roll from Gastons (tasted better at MSB, but that another story). We have AP's so not worried about using a day's ticket.
