Need help deciding- AP vs not AP, on site vs not on site... HELP

Okay our trip is not until Dec 08. I was wondering what would be more cost efficient. Should we purchase an AP? Stay on site with the DDP or stay off site and not have the DDP. If we stay off site we were looking at renting a vacation house for $135 a night.
Here are the details
4 adults
1 child (8)
1 baby (if we are lucky :love: )

We will stay 8 nights and dine at the following places (I hope)
Crystal Palace
Cinderella's Castle
Princess Storybook Dinner
Chef Mickey or Mickey's Backyard BBQUE
Coral Reef
and a couple others I have not decided

We will each have a 2 day park hopper and 3 base tickets along with purchasing tickets to Islands of Adventure and Universal Studios

I know it's a lot of info but I just don't know where to start or know if it would be beneficial to get an AP.
