Need fast advice please

We are heading to Vero Beach in a couple weeks and DW and I just decided to surprise the kids with a day trip to the world. Now my brain is racing with what to do. Mainly I'm thinking we want to visit either MK or AK for the day, but I'm not sure. I curious for thoughts on where to park the car for the day and then launch from there. Could I valet the car at Poly or Contempoary and jump the monorail to hit MK or Epcot, or should park at a resort. The reason I was thinking of valeting is I could take some resort down time for a early dinner and have my car right there to return home with.

Anybody ever done a day trip like this from Vero or surrounding areas that could give a lending hand?

I've been turned away from Contemporary even when I had ADRs to eat there because I was too early. You can only park if you have ADRs and then only for 3 hours. I don't know if Poly or others may be less strict. We had to park at TTC then DH got car at ADR time so it would be ready for us to head home after dinner from the resort. Bummer, I know.
