Need dessert ideas

My folks are coming over for dinner on Sunday, in the 17 years I have been out of the house, this is the first time they are coming to my house for Sunday dinner, we always go over to their house or out to eat. Anyways they are coming over around two and we are going to take my two year old to the park to ride the "Boo ChooChoo Train" and then back to my house for dinner. I am planning on putting a pot roast in the slow cooker in the morning and making mashed potatoes, but I am not sure what to do for dessert. My dad is something of a gourmet, he makes awesome desserts and I know I can't really top any of his desserts, but I do want to try to make something tasty. Any ideas??
 
How about a nice apple tart. Apples are in season, and while they look complicated there are tons of easy recipes out there. You can even pre-cook them, and reheat during dinner and serve with vanilla ice cream. Enjoy your meal.
 
Google "ooey gooey butter cake". There are many variations. The simple straight forward butter one is yummy, but this time of year, try the pumpkin one. Supper simple and easy, and people think you are AMAZING!! No lie.

I make cheesecakes, tiramisu, etc, and this is everyone's begged for dessert. Just do not admit how easy it is.
 
If you are not dead set on making it yourself and you have a Whole Foods near you, they make a killer chocolate ganache torte cake that is incredible. It is so good my 12 year old son asked for it for his birthday instead of a regular cake!!!
 

Chocolate Self Saucing Pudding

You can make this pudding in the oven or the microwave. Use an appropriate bowl depending on which appliance you decide to use.

Pudding
60 g Butter
1.5 cups Self Raising Flour
1/2 cup Castor Sugar
1/4 cup Cocoa Powder
3/4 cup Milk
1 teaspoon Vanilla Essence

Melt butter in a microwave. Stir in the flour, sugar, cocoa, milk and vanilla essence. Beat until smooth. Transfer to appropriate bowl.

(Note - I have made the mix about 30 minutes before my guests arrive and left it in the fridge).

Sauce
1 cup brown sugar
1/3 cup cocoa powder
2 cups boiling water

Combine the sugar and cocoa together. Sprinkle over the pudding mix (transferred to appropriate bowl) and pour the boiling water over the mixture.

Cook in a moderate oven (180 C) for about 30 - 40 minutes; or, for about 12 - 15 minutes on MEDIUM in a microwave.

Serve with strawberries, cream or ice cream.

NOTE: During the cooking process, the sauce will sink to the bottom of the bowl and the pudding will cook on top.

I prefer cooking in the oven as the pudding gets a nice crusty top (and in my oven, I cook it for 30 minutes). The microwave pudding comes out more moist.
My family prefer having this desert with ice cream.

Chocolate raspberry muffins - I make them from a mix
Fresh raspberries or frozen allowed to thaw with sugar added
serve with coffee ice cream & a dollop of whipped cream on the berries

Something about the combination of these flavors and textures is amazing plus it looks pretty and fancy on a dessert plate
 
If the people in your family like pumpkin pie, this is the dessert for you. And soooo easy!!! Matter of fact I'm the only person in the house who'll eat it and I've been thinking of making one and bringing one to work just so I can have some. LOL

Pumpkin Crunch Cake (it's more of a scoopable dessert than a cake though)
***I don't use the nuts though....I'm not a nut person, but to each his own.

1 (15 ounce) can pumpkin puree
1 (12 fluid ounce) can evaporated milk
4 eggs
1 1/2 cups white sugar
2 teaspoons pumpkin pie spice
1 teaspoon salt
1 (18.25 ounce) package yellow cake mix
1 cup chopped pecans
1 cup margarine, melted
1 (8 ounce) container frozen whipped topping, thawed

Directions
1.Preheat oven to 350 degrees F. Lightly grease one 9x13 inch baking pan.

2.In a large bowl, combine pumpkin, evaporated milk, eggs, sugar, pumpkin pie spice, and salt. Mix well, and spread into the prepared pan.

3.Sprinkle cake mix over the top of the pumpkin mixture, and pat down. Sprinkle chopped pecans evenly over the cake mix, then drizzle with melted margarine.

4.Bake for 60 to 80 minutes, or until done. Top with whipped topping when ready to serve.

Layered Cookie Bars
3/4 cup margerine or butter
1 3/4 cup vanilla wafer crumbs (about 50 wafers, crushed)
6 tablespoons of powdered cocoa
1/4 cup sugar
1 can (14 oz) sweetened condensed milk (not evaporated)
1 cup dark or semi-sweet chocolate chips
3/4 cup toffee bits
1 cup chopped walnuts

Heat oven to 350 degrees. Melt butter in 13 x 9 x 2 inch baking pan in oven. Combine crumbs, cocoa and sugar and sprinkle over butter.

Pour milk evenly on top of crumb mixture. Top with chocolate chips, toffee bits and then the nuts. Press down firmly.

Bake 25-30 minuted or until lightly browned. Cool in pan or on a wire rack. Cut into bars.

Shortcake. Dead easy and everyone loves it!

Make up your favourite recipe for tea biscuits/scones, cutting the biscuits into rounds before baking. Slice up ripe berries, add sugar to taste. (If you are using strawberries, you can sprinkle a small amount of an orange liqueur on them). Whip a pint of whipping cream and sweeten lightly, combining sugar until cream holds stiff peaks--you can cover the cream with saran and keep in the fridge. When ready to serve, slice the tea biscuits in half horizontally, spoon strawberries on the bottom half of each biscuit, cover with sweetened whipped cream. Cover with the top halves of the tea biscuits, layer with more berries and whipping cream. You can garnish with lightly toasted sliced almonds or some grated orange rind.
