Need advice & tips...first timer!

We're going to do WDW, Discovery Cove, and Seaworld next June and now my hubby is dropping hints about US/IOA. The problem is that I'm nervous because we've never been. We would bring our 8 year old son and our 1 year old. Obviously we would stay onsite to get the FOTL passes, but they would be riding rides while I had the baby. What is there for me to do with him besides stand around in the scorching sun?

I'd love to hear any tips or advice that i need to know since I'm totally unfamiliar with these parks. Have any of you went with children whose ages were so far apart like this?

And which onsite hotel do you recommend? Do any of them have breakfast included?
 
We just got back from 2 weeks in Orlando and there are things at both parks for you and your little one. We had my niece (3½) with us and she really enjoyed Suess' Landing (IOA) and Woody Woodpecker's Fun Zone (US). She also loved the Sinbad show (IOA), the Pet show (US) and Barney (US). She happily spent about three hours playing in the Curious George water area at Woody Woodpecker's Fun Zone (the 9 y.o. had a good time there too).
 
We just did this with a 3 month old. They have baby swap at all the rides, that lets one of you do the rides while the other hangs with the kid, then you can swap and do the ride when your hubby is done, very cool, allows you to not lose your place in line essentially.
 
Most of the "swap" areas are indoors and most queues too (esp. at Studios)
 

The short answer to your question about do the onsite hotels have breakfast included is --- maybe. Sometimes Loew's offers a bed and breakfast rate, which includes a full breakfast, or if you upgrade to club, then a continental breakfast is available in the lounge. Given that there would be four of you in the room (maybe 1 in a crib?) I would suggest HRH or PBH as their rooms are larger than RPR.
