I'm planning on making some kind of sweet breakfast casserole for DH and his breakfast club at work on Friday. I love to cook, but haven't really ever made anything like this before. Does anybody have any yummy recipes that will impress them? I'm scared that if I just find a random recipe on the internet, it will turn out soggy. Help!! :)
 
Here's one. Its not sweet, but it is good.


16 slices of bread

¾ lb. grated cheese

1 t. salt (may use more)

8 eggs

2 c. milk

½ c. melted butter

(1/2 lb. cooked sausage or 1 10oz. box frozen spinach [thawed & drained]

1 large can mushrooms


Cut bread into 9th’s without crust. Combine eggs, salt, milk, & butter. Place half of bread in bottom of greased 9 x 13 pan. Add meat or spinach & mushrooms & cheese. Then put rest of the bread on top. Pour egg mixture over bread. Make sure all of the bread is covered by the eggs.

Refrigerate overnight. Bake at 375 degrees for 45 minutes. Cool completely before cutting into squares.
 
How about blueberry french toast??? My co-worker makes it for us and it is delicious!!!

INGREDIENTS (Nutrition)
12 slices day-old bread, cut into 1 inch cubes
2 (8 ounce) packages cream cheese, cut into 1 inch cubes
1 cup fresh blueberries
12 eggs, beaten
2 cups milk
1 teaspoon vanilla extract
1/3 cup maple syrup

1 cup white sugar
2 tablespoons cornstarch
1 cup water
1 cup fresh blueberries
1 tablespoon butter

DIRECTIONS
Lightly grease a 9x13 inch baking dish. Arrange half the bread cubes in the dish, and top with cream cheese cubes. Sprinkle 1 cup blueberries over the cream cheese, and top with remaining bread cubes.
In a large bowl, mix the eggs, milk, vanilla extract, and syrup. Pour over the bread cubes. Cover, and refrigerate overnight.
Remove the bread cube mixture from the refrigerator about 30 minutes before baking. Preheat the oven to 350 degrees F (175 degrees C).
Cover, and bake 30 minutes. Uncover, and continue baking 25 to 30 minutes, until center is firm and surface is lightly browned.
In a medium saucepan, mix the sugar, cornstarch, and water. Bring to a boil. Stirring constantly, cook 3 to 4 minutes. Mix in the remaining 1 cup blueberries. Reduce heat, and simmer 10 minutes, until the blueberries burst. Stir in the butter, and pour over the baked French toast
 
This one is not sweet but it is good and easy!

1 bag of hash browns THAWED (I use frozen cubed breakfast potatoes.)
Put the hash browns into a greased 9x13 pan
Spread a little butter on top of the hash browns

In a bowl beat:
5 eggs
1 cup milk
2 teaspoons flour or cornstarch
2 teaspoons Worcestershire sauce
salt and pepper to taste
Pour egg mixture over the hash browns

1 pound (1/2 of a regular box) of Velveeta cheese. Cut the cheese into small cubes. Then sprinkle the cheese over the egg mixture.

Fry up 1 pound of bacon and cut it up and sprinkle over the top of everything. You can use the micro-wave bacon. (I actually used the precooked bacon and just cut it up and it works fine.

Bake at 350 degrees for 30 to 45 minutes.
 

1 container syrup
1 loaf bread ( I used Cinnamon)
1 carton cream cheese - NOT WHIPPED
1 stick butter
1 pint whipping cream
6 eggs
1 T. vanilla

Powdered sugar

Pour syrup in bottom of 9X 13 baking dish until syrup cover the bottom. In medium mixing bowl; beat eggs, whipping cream and vanilla until combined. Set egg mixture aside. Make sandwiches with the cream cheese and bread. Cut them in half diagonally. Place sandwiches in pan. Press sandwiches down firmly (THIS IS IMPORTANT). Pour egg mixture over sandwiches. Place into refrigerator for 30 minutes or overnight. Remove from cooler. Heat oven to 350%. Melt butter. Pour butter over sandwiches. Bake until they are set. Dust with powdered sugar.

These are a hit when I bring them to church.
