NBC celebrates Black History month....

I work at a college and we have all sorts of events celebrating Black History month--one of which includes the cafeteria serving many of these dishes once a week. It's actually my favorite time to eat there--I love collard greens.
 
Mark this "Exhibit A" as to how racially jumpy this country still is. I don't think the meal is any more "offensive" then when our cafeteria offers corned beef and cabbage on St. Patrick's Day. Now if they assumed that every African American employee would automatically want the food because of their skin color... then they'd have something to get upset about.
 

I suspect the reaction may have be a little different if it was the Fox commissary that had this menu instead of NBC.
 
African-American girl here.....Not offended....see no need to be offensive or defensive. I dont get it. So NOW we have arrived to the point where people cant celebrate culture without offense. This is becoming sad. But I have to say, I am not the least bit surprised that it WAS considered racially motivated. I don't believe it was, but I know there are some out there who would argue the point. And knowing me, I would sit down and listen to their argument.......while I enjoyed my fried chicken, collard greens, corn bread and potato salad....did they forget the potato salad on that menu?

Actually, I think I am going to make the un-fried chicken. It sounds good. :thumbsup2 It's basically low-fat yogurt & high fiber, multigrain cereal flakes with spices. :)


A little PSA for any diabetics, hypoglycemics & pre-diabetics: adding cider vinegar to foods, will neutralize the sugar, lowering the glycemic index, (sugar count) in any food. :thumbsup2

I'd volunteer, but I've never made them either. Can I bring homemade pecan pie instead? I mean we saved calories and fat with the chicken and cornbread. I can give it all back to us with a good dessert. lol

lol, I'll bring the greens. My uncle from Florida taught me how to make them and I have had a secret weakness for Greens since.

I don't get it. I ate lunch yesterday with 4 African-American women. I had vegetable soup. They had fried chicken, greens, and potato salad with sweet tea. :confused3 I wish I had been invited. THeir fried chicken smelled heavenly.
