You can add the no-expire option to your tickets at a later time, correct?

Also, does it matter if you purchased them through Disney or Ticketmania?

Wouldn't it be smart to buy the amount of days you want then decide later, just incase you use them all.

Example: We're going for 14 nights and getting a 10 day pass (with the plus options). Wouldn't it be smart to see if we use all the 10 days before adding on the no expire option just incase we use them all? If we only had like a day left, it would cost more for the no-expire than just purchasing a ticket for next time.

Just want to make sure I understand the new tickets...

I think you definitely have the correct idea. You can convert the ticket to no-exire any time before it expires by payment of the fee.

If you have only one day left it is definitely not worth it. If you have two days left then you need to check closely before making a decision. If three or more days remain then it is worth the money.
