If we have a 8 day ticket with no park hopper can you use 2 days in 1? Ex: if we go to a park in the morning but it gets too busy can we leave then go to another in the afternoon and use another day off our ticket? Thanks for your responses.

You can not use two theme park days in one day. Only buying Park Hopping will let you move from park to park in one day.

Are you staying at a Disney Resort? If you are, consider timing things with the Extra Magic Hour. Then you can go in and out of the one park and not feel like you are missing out on something.
