My first time dining at disney plans so far...

We have now reservations at the following:

Narcossee's
LeCellier
Primetime Diner
Sci-fi drive in (though not thrilled with food choices, we may change it)
Whispering Canyon

We are also going to try Kona and may switch from Sci-fi to Coral Reef.

As for quick service, we are going to try:
Flame tree (I would be content eating bbq sandwhiches the whole time:confused3 )
The fish and chips place in epcot
Maybe Pecos Bills, but its such a mixed bag of reviews I am not quite sure...
I've eaten at the McDonalds wanna be place in AK, and liked it so we may go back there.

As for snacks,
I definitely want a baked potato from the stand in MK, and I want to try an ice cream sandwich from main street bakery. The Figero fries looked good, but I heard they aren't the same anymore.

Any suggestions??

A lot of people like the character meals, but we don't care for buffet style food. We aren't quite ready to try African food just yet either. Hubby is just now branching out ethnically.

We do like Asian food, minus sushi, Mexican, and Italian.
We are also going for food and wine, so we will get to try some new things for a not so bad price, and if we don't like it I won't feel bad throwing it out since its such a little portion, I am not really wasting much.
 
We hated Peco Bill's that said, others love it so try it. I suggest just using one CS credit and share the meal. If you really like it get another meal. If not walk up the street to Columbia Harbor House and grab something.

Boma is far more than Afrian food. It may have the best Prime Rib at WDW. It is also an option for breakfast with very American fare as well as more unique items.

You don't have to do any character meals, but not all character meals are buffet, some are All You Care to Eat. At those meals your waitress will bring you a plate of food and replenish as you request or bring a platter of food serve you and serve you more at your request. Some AYCE meals are:
'Ohana breakfast, Norway Princess breakfast in Epcot, Cindy' Royal Table Breakfast(you get to eat inside the castle) and Liberty Tree Tavern Dinner until Jan 4th, 2009. Whispering Canyon's skillet is all you care to eat, though it isn't a character meal.
 
you cant go wrong with any of the restaurants if youve never eaten any where. youll have a good time.
 
We were in the same boat last year and picking out our ADRs was so hard because there are so many great options. It was my fiance and I, and our favorite meals, based on food were Coral Reef (we ate there for lunch) and Cinderella's Royal Table (dinner). I heard Le Cellier was great but we couldn't get in.

Also I had read mixed reviews on Capn Jacks but we went there anyway and enjoyed our lobster tails! The ambience wasn't really anything special, but we enjoyed the food.

I forget the name of it, but the CS in AK that serves ribs was great! That may be the flame tree you already mentioned.

We also really enjoyed the Luau at Poly (takes 2 credits) but it includes beer and wine!

For snacks, try the smoothies at MK on Main Street at the bakery, once we discovered these, that's all we wanted to get with our snack credits!! My fiance jokes that when we go back next year on the deluxe dining, he's going to have 2 smoothies a day every day!!!

Good luck with your planning, I think reading the menus on wdwinfo helped narrow things down for us, too.
 

If you like asian food I would give suggest giving the Teppan Edo a try in Epcot Japan Pavillion.

You've made some really good choices. We are also doing the DDP for the first time this trip and spent a lot of time researching the menus and asking for help from the DIS'ers before making our ADR's.
Just wanted to say that I've eaten at Sci-Fi diner and the food was just okay in my opinion. The atmosphere was fun for the first few minutes but they play the same thing over and over and it's gets old pretty quickly. I would definitely ditch that one for Coral Reef which is much nicer with really great seafood. (but its just an opinion, I'm sure lots of people love Sci-Fi.
Primetime was fun but the food was more like a "home cooking" type of menu. It was good though and the portions were generous. Just that both of those places kind of have the same type of themey environment. I'd choose one of them then opt for something completely different for your other choice.

We had 4 table service credits each and choose to splurge on signature dining experiences as we NEVER eat at the more upscale places due to budgets. We choose Narcoosees and the Yachtsmen Steakhouse. Haven't tried either so we're pretty excited. Then on to the Disney Wonder for even more food. Yikes. I'm gonna be happy not to put on 10lbs!

We loved LeCellier but were only to get in for lunch. Flame tree is our favorite for CS over all the parks and in MK we prefer Cosmic Rays over Pecos Bills.
When it comes to snacks we usually go for the fresh fruit bowls. I know, a little lame, but after french fries w/CS and desert at every TS fruit was great to get and keep in the stroller and take back to the room for snacking.
