So this will be our first trip in December and our first MVMCP.

I remember hearing about the party selling out on the DisUnplugged podcast. How quickly does the party usually sell out? Is this something that I should be watching for every day and grab tickets to the day they go on sale?

Only certain nights sell out. (Actually, not very many do.)

Those sell-outs can happen well in advance (as in the ones that are closest to Christmas)
or other sell-out nights may not happen until the day-of.

No way to state just which parties will or won't sell out, or exactly WHEN they will.
Also, it has been the case that Disney can sometimes ADD extra tickets to nights
that are sold out (or appear to be heading that way.)
 
A few of the parties sell out a few weeks or more in advance--I think the first one and the ones near Christmas like Robo said. This past year, more than usual sold out a few days ahead of time . For example, we were there the full week before Thanksgiving and were planning to attend on that Thursday (Nov. 20). I went online that Sunday or Monday to buy the tickets, and they were sold out. I thought it was a computer glitch because it was predicted to be the third or fourth least crowded of the parties, so I tried to buy tickets at the concierge desk. They really were sold out! I did get tickets for Friday night, but they sold out also either that Thursday or the day of the party. So, my advice would be if you are going to one of the traditionally sold out parties, get your tickets a month or more in advance. If you aren't going to a typical sell-out party, check the weather ahead of time, and maybe buy tickets about a week ahead of time.
 
Some parties can and do sell out. Also if there is something special going on like the soft opening of the new Fantasyland areas a couple years ago seemed to cause many more sell outs that year. Pick a date and buy your tickets when they go on sale and you will have no problems.

Some people wait until they can see what the weather is going to be like. If you choose to do that you may have to take whatever date is available and it may not fit into your plans.

We try to attend on our arrival day. Check in to resort early, if possible, unpack, get lunch, relax and catch the bus about 3:30 for a 4PM entry. Many years we book dinner inside the MK around 5:30ish.

I think you will enjoy December. We go most years early in December and love it.

I love this idea!! I think I will keep it in mind. We usually head to Epcot the day we arrive but maybe we will see if there is a party that day instead.
 
We went to MVMCP the first week of December/week after Thanksgiving. We waited until 2 days prior to be sure of the weather, no seriously sick kids, etc. and purchased them at the Concierge. But that is one of the "best weeks" for crowd levels during the holiday season, so I felt safe doing that.
