RAISIN SQUARES
3 c. flour
1 c. shortening
1/2 tsp. salt
2/3 c. cold water
Mix ingredients well together. Divide pastry dough in
half. Roll out one half to line pan, 10 x 16-inches. Save
other half for topping after filling has been added.
Filling:
1 pkg. seedless raisins (15
oz. pkg. at least)
3/4 c. sugar
1/2 Tbsp. lemon juice
1 Tbsp. butter
2 Tbsp. flour
2 c. cold water
cinnamon and nutmeg to taste
if desired
Cook ingredients until thick. Place over pan lined with
pastry dough. Roll out remaining pastry dough and use as
topping. Bake in oven, set at 400 degrees for 10 minutes. Reduce
heat to 350 degrees and bake for 30 minutes. Cool and sprinkle with
confectioners sugar. Cut into squares. Yields 24 squares.
