I've had some requests for the recipes I used to my make-it/freeze-it/warm-it meals for our trip to the Fort. With all of the meals, I made the dish, let it cool, and then put it into a gallon sized freezer storage bag. While camping, I would get one of the bags out of the freezer or cooler, empty it into the crock pot and let it sit on "warm" all day. In the evening we had a nice warm home cooked meal.
Some are very simple, some have a little more preparation. Here goes, in no particular order:
Lasagna
I fit about 2/3 of this into a gallon freezer storage bag
12oz container dry curd cottage cheese
1 cup shredded Parmesan cheese
2 eggs
1 tps dried parsley flakes
2 26oz jars pasta sauce
Half package (6-8) lasagna noodles - uncooked
1 lb your favorite sausage - crumbled, cooked, and drained
2 cups Mozzarella cheese
Preheat oven to 350. In a medium bowl combine cottage cheese, Parmesan cheese, eggs, and parsley flakes. In a 9x13 pan or casserole, spread about 2/3 of a jar of pasta sauce. Top with half of the lasagna noodles, half the cheese and egg mixture, half the sausage, 2/3 jar of pasta sauce, and half of the mozzarella cheese. Repeat layering, finishing with mozzarella cheese. Coer pan tightly and bake for one hour. Uncover and bake an additional 15 minutes.
Sloppy Joes
I love my sloppy joes made with ground chicken, but you can use ground beef, bison, turkey, chicken... whatever
Brown the meat and add Manwich! Doesn't get any easier than that!
BBQ Pulled Pork
I buy a pork roast or pork chops or pork loin... whatever is cheapest per lb. I usually buy about 2 lbs worth. In the morning I put it in the crock pot on low with about a cup of water and let it cook all day, breaking it up with a fork every now and then. It will get softer and tenderer as the day goes on. When it gets loose and tender, I add a bottle of my favorite BBQ sauce. I let it cook for another hour or two, then serve (or in this case, I let it cool a little and then put it in the bag and froze it)
Baked Bean Chili
Super easy and super good. This makes a LOT! It will make a few meal bags! (Yield = 24 servings)
2 lbs ground beef
3 cans (28 oz each) baked beans
1 can or bottle (46 oz) tomato juice
1 can (11.5 oz) V8 juice
1 envelope chili seasoning
In a large pot (again, this makes a lot!), cook beef and drain. Stir in the remaining ingredients. Bring to a boil. Reduce heat and simmer uncovered for 10 minutes.
