So excited! I’ve been waiting for weeks, lol.

Here’s hoping Palo, Remy dessert and a Tortola excursion I want are available. I’ve booked a tour on Tortola, but I do want options…

I’ll be prepared, if by the time of my cruise that Palo and Remy are not available, to try and snag them on board….but I still hope I won’t have to do that!
 
Yes, I think that you are correct that people do not want to miss the first night in MDR. If you book first night DCL allows you to book a second night in PALO's ( don't know if that is still the case)

I book through my computer on the website. Just easier for me to navigate the site.

I am Platinum and get online at midnight so that could also make a difference. I booked first night PALO on our last Wish cruise. It was our second Wish cruise and we really didn't care for the MDR's on the first Wish cruise. We felt that they were very noisy an the tables we very close so it was difficult for the staff to move around between the tables. We were actually planning to skip as much of the MDR that we could but we found the MDR's to be a bit better on the second Wish cruise. Our Head waiter said that Disney did make some changes to alleviate some of the issues with the tables being on top of each other.

Yes, if you book a dinner in Palo/Remy/Enchante the first night, you can book another dinner later in the cruise-the first night 'counts' differently.

I got Palo dinner/2nd night, Remy dessert/3rd day and the Jost Van Dyke full day on Tortola day. Now, I’ve already booked a private tour for that day, but now I have options.

I deliberately didn’t want to book Palo the first night and then not have it to look forward to …but I changed it now to the first and last night. However, I don’t want to miss the grand marnier soufflé at Royal Court, so I might cancel 1st night. The second RC is Pirate’s night. Would they serve that soufflé upon request even though it’s not on the Pirate menu?

When I called DCL a few weeks ago for a separate question, he told me this was tentative:

Sunday night: Formal
Tuesday: Pirate
Wed: semi-formal
Thurs: Pixar

The Disney CM even told me the tentative rotation for the dining rooms:

Sat night: Royal Court
Sunday: Animator’s Palate
Mon: Enchanted Garden

Tuesday: Royal Court
Wed: Animator’s Palate
Thursday: AP
Friday: Enchanted Garden

Probably not. If you were in a different restaurant but the souffle was on the menu in Royal Court that night, then you could probably get it (easiest if you request it from your servers ahead of time). But if it's not on the menu at RC for that night, then I wouldn't bank on it because they'd have to make it 'special' for you in amongst all the Pirate Night foods. It's DCL, so they might, but I wouldn't count on it.
