You have do so over the phone.
But, you need to call a special number to use more than 2 gift cards:

Party tickets go on sale in early May.

Yeah, my understanding is there aren't any refunds - though exchanges might be done, if Disney's feeling forgiving. Technically, you are buying a hard ticket for a specific date. Sort of like a concert or a baseball game. Disney *might* accept an exchange, but... I wouldn't bet on it.
