I am so inspired by the EAT at Home thread. It makes me think that the biggest obstacle for us eating at home is advance planning. If we have the necessary ingredients we are going to have much more success in eating at home.

What are you have to have pantry/refrigerator items?


Mine are

beef/chicken broth
various pastas
spaghetti sauce
diced and whole canned tomatoes
kidney/black beans
tomato paste
tuna
cream of mushroom or chicken soup
onion soup mix
panko bread crumbs
corn meal

Garlic and wine.

Wouldn't be an Italian home without either of those.

This sounds like my list but I'd add flour tortillas, corn tortillas and shredded cheese.
 
Many of the items on the lists posted are on my staples list. One of my favorite go-to meals is a frittata. They are so versatile, and you can throw all sorts of leftover meat (sausage, ham, etc) in along with leftover roasted potatoes and veggies. Two items I always keep on hand for my frittatas and other meals are roasted red peppers (jarred) and sundried tomatoes (jarred). Of course eggs are always needed for a frittata, and they are a staple in my household.
 
Spices are the most important in my opinion. They can really make any dish taste better. Those that are vital for me include black pepper, garlic powder, bay leaf, basil, parsley, oregano, curry, poultry seasoning and Tony Chachere. I also like chicken and beef bouillon.

Otherwise, I think that the lists above include pretty much everything except that I have to have ranch and honey mustard dressing whether I buy it bottled or make it. These dressings are useful for a lot.

I cook almost entirely from scratch (no processed food) because of some health issues of family members, so my pantry is a little bare - but my freezer is packed solid :woohoo:
As far as pantry items:
Black, kidney, garbanzo, cannelini, and other beans
corn
pasta
coconut milk
Assorted pastas
couscous
rice
lentils
asst flours - whole wheat, teff, masa harina
a million spices

and garlic and wine ;)
 
Since I preplan all of my dinners, as long as I have the items for each meal for the week, I'm all set there, whether they are "standard" pantry items or not.

For breakfast, lunches and snacks, I stick with fresh fruits, veggies, whole wheat breads and wraps, cheeses (sliced and shredded), eggs, milk, juice, bagels, peanut butter, Nutella, Boca burgers and Boca chicken patties, frozen waffles.

For the pantry.....

beans (black, kidney, refried, and dried)

spaghetti sauce and canned tomatoes

soup stock (chicken, beef and vegetable)

a few canned soups, but rarely use them

long cooking brown rice

couscous

quinoa

tuna

whole wheat pasta

Heart Smart Bisquick

Fiber One pancake mix

oatmeal and other hot cereals

wheat bran

crackers

baking supplies (flour, sugar, vanilla, bran, etc)

coffee/tea/cocoa

vinegar and oil

herbs, spices, extracts

assorted snacks (granola bars, pretzels, raisins)


I think that pretty much covers my necessities. Since I do live pretty far from a grocery store, I do keep a fairly well stocked pantry at all times. But I don't go nuts. We could certainly live on it for a while, but we might get sick of tea and tuna!

I keep most of what PPs have listed. Since my kids are in sports and we have quite a few evening practices, I always keep a good selection of deli meat and a variety of sliced cheeses. My grocer has a day old section in the bakery, where I pick up whatever variety of breads they have to make either panninis or some other type of grilled sandwich with lettuce and tomato or fresh cut fruit on the side. It makes a good quick meal, when it's too hot for soup or stew from the crock pot on busy nights.
 
We have some allergies and are also trying to eat more healthy foods so our pantry is kind of bare as well. But our staples are:

Cereal (at least a couple varieties)
Beans - all different varieties
Brown Rice - instant and long cooking
Salsa
Gluten Free Crackers
Brown Rice Pasta
Canned Tomatoes
Corn Tortillas
Pretzles
GF Baking Mix
Sugar - brown and white

In the fridge we always have eggs, milk, butter, sour cream, and milk boxes (for DD's lunch), ham, reduced fat cheese, and Udi's Bread.

I make quinoa salads....yummy!!! Quinoa is like a grain, and it is yummy yummy yummy and so healthy for you! I make a greek salad with it, with feta, cucumbers, tomatos, celery and a homemade greek dressing....tasty!
