Must Do's - Two Day Trip with 3yo

We've been many many times and we could probably walk the entire property with our eye's closed. This will be our first trip with our son who is 3 years old. We intend to gently guide him through the park but also making sure he is allowed to take the lead. He LOVES Mickey and he loves tunnels so the dark rides will likely be a hit with him as will anything that involves Mickey Mouse. He also loves getting spooked so the faster scarier rides might work too. What are the must do activities for a courageous 3 year old?
 
How tall is he?

My kiddos sound like your little one, and their favorites are: Barnstormer, Pirates, Haunted Mansion, and Peter Pan. They love every ride, but the subtle thrills get them psyched! My children aren't tall enough to ride the real thrillers, so we're working with what we can for now. Our trip next month will be their first time riding Mine Train. Soooo excited for that one!
 
He's exactly 38 inches. I literally was on the Disney site the minute fast pass unlocked for us and the Mine Train was already booked up solid! Hopefully the waits won't be too bad when we go (Nov 14th and 15th). We aren't telling him we're going until his 3 AM the morning we go. He'll be a little confused but psyched when it all finally sinks in. We've been slowly indoctrinating him for the past couple months with Magic Kingdom promo videos and the Magic Kingdom story book. Now he's started to ask when we can go visit Mickey in his castle.
 
Yes!!! We watch the promo videos, parades, and all kinds of fun stuff on YouTube! My kids pack backpacks every day for Disneyworld, as they play. It's the cutest thing!! We'll be there on your dates, too!

Can you get an early morning dining reservation to get in ahead of park opening to have a better chance of 7DMT without too bad of a wait?

What MK story book? I want one!

We could but we wont get to Magic Kingdom the first day until sometime around lunch time and the next day we're popping by Animal Kingdom to check out Pandora's Na'vi River Journey before heading back to the All Star Sports to recharge. We're then headed back to MK for as long as there is gas in our engines!

Tuesday Itinerary:
Flight arrives @ MCO - 9am
MK 12pm until 4pm
Epcot 4pm-9pm

Wednesday Itinerary:
AK 9am-11am
All Star Resort 12pm-2pm
MK 2pm- meltdown lol

Thursday Itinerary:
Disney Springs - morning
Flight Departure @MCO - 5pm
 
My family will also be down there at that Time. Have a great time!!!
HAUNTED MANSION was a huge hit for my kids.
The new Frozen ride at EPCOT is at times pretty dark and there is a drop.
of course the pirates of the carribbean is decent for what you are looking for.
