Must do's for first time visit for 7 year old

I Know iv been loads with my DD but DB DD who will be 8 whilst there along with DB birthday . We are keeping it as a suprise and the idea is to tell her we are going to manchester to a special disney show and we are having an overnight stay. Have not figured out how to tell her yet.What would you say are a must for Any little girls first trip. We are only doing 12 nights due to school holidays. I had booked a room at HRH but have decided to skip universal and take her just to disney the water parks and maybe discovery cove which none of us have ever done.
Her birthday is the first day after arrival. She is a really girly girl and loves princesses and frozen (something I have never watched !!!!! How embarrassing) heard it is very good though.
Where would you recommend for her birthday park/ special meal. Also other days / shows to not miss with her. DB has already picked epcot with ohana breakfast and teppan edo for evening meal.
All new with the FP+ for me. Have booked WLV for our last 7 nights but have 34 days before I can book BWV or BC. Again something new.

We had a Princess Day. We went to BBB in the morning in MK. I booked the package with make-up and nails and we took our own dresses. We then went to Akershus for lunch which was fab. Next time we will probably do BBB in the morning, followed by BOG and Rapunzel, FP for Anna and Elsa and then pick a pearl in Japan. I have also heard the mermaid makeover at the Pirates' League is good.

8 is a great age. Old enough to ride everything, young enough to be entranced by the magic. Akershus and Cinderella's Royal Table are both great for girly girls. I prefer the food at Akershus but you can't beat going inside that castle. My 12 year old DD still gets a kick out of that.
