Must-Do Disney World "Experiences" (I.E Pirate League)

We're planning our trip to Disney World and I'm wondering what other "experiences" there are. They first time we went, my boys did the Pirate League and we'll most likely do it again, but is there anything else similar to that experience that we don't want to miss out on?

You can try one land of Sorcerers of the Magic Kingdom and see how your kids like it. Should only take you maybe 20-30 mins to do it. Less if you are in Fantasy Land since there are only 2 portals active ATM due to construction.
