Must Do Activities for Kids??

I'm constantly amazed what I learn about WDW even after visiting there numerous times-you just can't see and do everything. I have an 8 year old son and after learning about the GF/YC Pirate Cruises, I think he'd love that for our next trip....are there any other little known activities for kids I can consider? Thanks!

At Epcot in the Land, there is a place where they can make free cookies and be bakers. The times are on the half hour. The passporter or such can give you more details or someone here. It is really neat and fun.
