If the buses are empty they can handle two some can handle three but if there already one on there you my have to wait. Disney transport bus driver will call dispatch and they will send another bus for you so you dont have to wait to long.
But in jan you shouldnt have a problem it not that busy that time of the year the only time you might have a problem is a closing. Disney trys hard to get you to your resort quickly and safley.
We went in April (the week after Easter) and my mom and aunt each had a ECV. I don't ever remember having to take more than 1 bus. I think we were all together every single time we rode the bus. Have a great time!!
My friend and I, both on ECV's were there last October and didn't have any problems. One thing I would suggest is make is to take a power strip with you to make it easier to charge both at the same time.
With charging the scooters I actually think I would use two, different outlets. Maybe, I'm wrong but I would think you would get a quicker charge if each scooter had it's on outlet. I'm not an electrician; so, I don't know for sure on this one.
