Jane, make your reservations for the Mouseketeer Club in advance. I can't remember how far in advance you can make them (30 days?), but a simple call to WDW-DINE should answer that.
I have actually used Disney's In-Room Sitter service, the GF's Mouseketeer Club, and the Poly's Never Land Club whenever I have dined at Victoria & Albert's. All three options worked beautifully (for the sitter, we had an infant, a toddler, and a child who was in the mid- to upper-single digits).
The last time my son enjoyed the Poly's Never Land Club, I think he was 9 or 10 (boy, how time flies -- he's in college now). When my daughter used the Beach Club's Sandcastle Club on one of our recent vacations, she told me that there was a 12-year old girl there that night who was enjoying the video games and the craft projects.
My family has been consistently using the kids clubs at WDW for quite a few years now. Sometimes they are packed with kids and sometimes they are fairly empty. But parents are continually checking their children into and out of the clubs all the time, so the loading level changes. The one thing that has remained constant, however, is the fact that both of my children have always enjoyed their stays at the kids clubs. My daughter actually begs to stay at a few of them during our vacations. I guess she gets tired of hanging out with her mom & dad and wants to have some fun with people closer to her own age. To each his/her own.
