Mother's Day Meal?

I am going to be cooking for my mother, 82 yr old grandmother, 3 month pregnant twin sister and my 4 yr old nephew for Mother's Day. My husband is allergic to shellfish, but he'll be out of town so I am leaning towards seafood because I don't get to cook it very often. Unforunately, I am rusty at cooking it because of that reason.

Anyone have any good recipes? I am not totally stuck on seafood and am open to suggstions for a nice Mother's Day meal. What would all the mother's like to eat if given the choice? (I have no kids, hence why I am cooking.)

I'd love it if someone made seafood for me! :teeth: It's one of my favorite things!

Do you grill? I have a recipe we used last summer for shrimp on the grill. It was outstanding! :teeth: I guess you could broil it if you don't grill. (I always make DH use the gas grill.)

Maybe have a crab dip and/or Crab Rangoon (like wontons) for an appetizer?

We usually just boil the shrimp with some Crab Boil seasoning in the pot when we don't buy it already cooked. Then chill & serve with a good cocktail sauce, baked potatoes and garden salad.

Spicy-Orange Grilled Shrimp
For 1 lb shrimp:
½ c lime juice
1 Tbl Tabasco sauce
2½ Tbl balsamic vinegar
1 Tbl black peppercorns, cracked
1/3 c orange marmalade
¼ c oil
2 cl garlic*
1 tsp Kosher salt
2 Tbl cilantro
1 tsp orange peel

Mix oil, vinegar, & lime juice together in a sauce pan & heat on a medium setting. Add marmalade, Tabasco sauce, salt, & black pepper then mix well. Add cilantro, garlic & orange peel. Remove from heat.
Arrange shrimp in a deep glass dish, pour marinade mixture over them, cover, refrigerate for 6-24 hrs., then grill on BBQ until done.
This marinade is also good on fish, lobster, crawfish, etc.

*I buy minced garlic in a jar & just used a heaping soup spoon. We like garlic. :rotfl:

CRAB RANGOON

Filling
½ lb crabmeat, drained and chopped
½ lb cream cheese, room temperature
½ tsp A-1® Steak Sauce
¼ tsp garlic powder

Wrappers
30 won-ton wrappers
1 egg yolk, well beaten
Oil for deep frying
Chinese mustard and/or red sauce

Combine crabmeat with cream cheese and seasonings in a medium bowl and
blend to a paste. Place heaping teaspoonful on each wonton. Moisten edges of wontons with egg yolk. Gather the four corners of the wontons together at the top and pinch the edges together to seal. Heat oil to 375ºF. Add wontons in batches and fry until golden brown; about 3 minutes. Remove with a slotted spoon and drain on paper towels. Serve hot with Chinese mustard and red sauce for dipping. Yields 30.
 
The shrimp sound great! Dh does all the grilling too, so I'd have to use the broiler but that's not a problem.
 
we did grilled salmon (just filets, not steaks) on the grill the other night. DH marinated them with some lemon, olive oil, dill and garlic, then grilled them directly on grill. We also had mashed potatoes (we like them "gourmet style" with the peels left on and lots of butter and sour cream) broiled asparagus and strawberry shortcake for dessert (well Sara Lee poundcake with fresh strawberries and whipped cream) it turned out to be a very elegant meal but it was so easy to do, and the salmon filets were much cheaper than steaks which we normally grill.


Mother's Day luncheon/dinner makes me think of all the things that I like the DH never wants to eat, such as chicken salad, really good pasta salads, etc...(he would say where's the beef?)

I've also made this dish from Paula's Home Cooking and it's very good. It's more than a salad, I served it like a casserole...very rich.

Baked Shrimp-Crab Salad
1 green bell pepper, chopped
1 onion, chopped
1 cup finely chopped celery
1 (6-ounce) can crabmeat, picked free of any broken shells
1 (4-ounce) can medium shrimp
3/4 cup mayonnaise
1/2 teaspoon salt
1/4 teaspoon pepper
1 teaspoon Worcestershire sauce
1 cup buttered cracker crumbs or bread crumbs

Preheat oven to 350 degrees F. Grease a medium casserole dish or medium glass baking dish with butter.
In a large bowl, combine the bell pepper, onion, and celery. Add the crabmeat and shrimp, and then the mayonnaise, salt, pepper, and Worcestershire sauce, tossing gently with a plastic spatula to combine. Spoon the mixture into the prepared dish. Sprinkle crumbs over top. Bake until a golden brown crust develops, about 30 minutes.

I"ve made Seafood Newburg a few times. You find the packaged Newburg dry mix in the grocery store by the dry gravy mixes. I buy the Newburg sauce by Knorr. Prepare that and add fresh cooked shrimp and serve over rice pilaf. It's very good. Add a fresh veggie, rolls and fruit salad and you have the perfect meal. :flower:
