Mostly non-parks trip, when to go?

We're thinking ahead and planning out our 2015 trip already. We're a family of 4, with DDs who will be 9 and 5 at the time of the trip. We have APs now that expire later this year and don't plan to renew them, instead we want to do a mostly non-parks trip. We have waterpark passes from old tickets that we want to use for 2 or 3 days, we will do one parks day either a party day if we happen to go during Halloween or Christmas season or one day hopper pass and we want to go Legoland.

So our only requirement is warm enough to swim, but not cripplingly hot. We usually go in the fall or early December, but we're open to other times of the year. Not tied to school vacations.

Where will you be staying? Busy times for DVC are different than the standard busy times, so I would look into that if you are staying at a DVC resort. For example, one of the busiest weeks for DVC is the first week of December which it not necessarily a busy week for the rest of the World.

We spent two days at POR after a cruise a few years ago, and did not visit any parks. We were there at the very beginning of May and felt like the resort was virtually empty and we had the quiet pool to ourselves one afternoon. Beautiful weather too.

We do own DVC, but that's not really a factor. We always book at 11 months out and have never had a problem getting a room.

My thought was more when the resort will be crowded... not so much room availability since you'll be booking so far in advance. If I were going and spending most of my time at the resort, I'd want it to be when occupancy levels were low so you have things like the pool and restaurants more to yourself.
