Below is our Internary in Feb. if you had your choice what is the most ideal Fantasy dinner rotation

Day 1 Port Canaveral
Day 2 at sea
Day 3 at sea
Day 4 Tortola- pirate night (don't plan on eating in dining room)
Day 5 St. Thomas
Day 6 at sea
Day 7 Castaway Cay

My ideal rotation is any that DCL gives me. There's really no advantage (one rotation over another) as everyone onboard will have the same menus available to them during their cruise. That is, 3 rotational menus, 1 pirate menu, and 3 menus that are the same for all dining rooms on those nights.

We are going on our 2nd cruise at the end of January (same ports as you) and we requested the AERAERA rotations because Animators palate is our favorite and in our opinion is the best place to be for pirate night.

Love it for pirate night
All the animation turns to pirate movies in that restaurant!
 
I'm an ERAERAE kinda guy. My wife likes EG better than any of the others, and that means our Remy night can be on a Royal Court night. Neither one of us is all that enamored of Royal Court. On an Eastern we'll have a sea day the day after Remy, which I prefer.
 
Your MDR on Pirate Night will be the MDR you visit 3 times. Since you are not planning on eating in the MDR on Pirate Night, I think that makes rotation less important since you will be experiencing each MDR twice. From there, it's really a personal preference thing. Some people like being in Royal Court on Formal Night (night 2). Some people like starting in AP since it's their favorite. There really isn't one optimal. It's whatever YOU prefer.
 
We pick ERAERAE when traveling the EC Itinerary because on the first two nights of the cruise there is typically vibration in the aft of the ship due to the speed and distance that the Fantasy needs to travel in order to get to the first port. Many people have complained about the movement of the ship on the first night in AP.
