I'm taking my wife here for her 34th birthday on Friday...

Any suggestions of what is good on the menu?

In the past, at Flying Fish, I have asked if the chef would create something for me... wonder if they would do that here?

Also, I've heard that there is a specific menu item that Morimoto will prepare for you personally table side if he is onsite. Does anyone have an idea of what that item is?

his signature dishes are the best like @a742246 I'm a fan of everything there for the most part I haven't tried the sangria I usually get his special draft only at his restaurants or a manhattan east depending on my mood.
 
As a heads up (if you haven’t already) - you may want to contact the restaurant about their current dinner menu. It was significantly scaled back last month and no idea if it’s gotten any better. As I recall, it was about 6-7 small plate appetizers, and for main course they had the ribs, orange chicken, Peking duck and around 5 or 6 varieties of ramen and vegetable/tofu dishes (no sushi except on weekends). Hopefully it’s improved, but I haven’t seen any recent reviews.

Based on the limited menu, best guess is they won’t be creating anything unique as they may not be stocked for that.
 

There was a fish dish on crisp rice and a Singapore noodle dish that were delicious! This is from an Asian who is an asian food connoisseur. It does not look like either of those are on the menu right now. We loved our meal there.

I know that Morimoto has done the omakase in the past when he's been there. I don't think they're offering it now. Pre-Covid, you would have to call at least 24 hours in advance and I think it was $150 per person (Omakase is a series of small, chef chosen and prepared items- not a single item).
 
Honestly regardless of menu you cannot go wrong with anything there, it is delicious. Wash down some peking duck with a lychee martini and you'll be in heaven!

yeah I've done it also a great experience I snoozed on the one Morimoto did I did meet him his last charity event he had there was awesome.
