Monday and Saturday

I have most of my trip booked but I am not sure where to put Animal Kingdom and Hollywood Studios. I have a Monday and a Saturday available, which park would you visit on each day?

I would visit on a Monday. Weekdays usually aren’t that bad for crowds.
 
I tend to avoid park days on Saturdays when we travel down, based on the simple fact that weekends are more crowded. So I would suggest DHS on Monday and AK on Saturday (AK being an easier park to manage with crowds). But if you think you can mange DHS on a more crowded day, having DHS on Sat would result in AK being even less crowded on a Mon, but we're probably splitting hairs at that point

Are you planning on buying LLs? They will be easier to book later in your trip.

Mon usually has extended evenings at Epcot and more people hopping to MK via monorail (or HS via Skyliner).

Based on the recent wait time data, both parks have lower average wait times on Saturdays, and Animal Kingdom has the higher average wait times on both days. But the difference between Mondays and Saturdays is greater at Hollywood Studios than at Animal Kingdom. So, using that data alone (and I realize there are other factors to consider), you should do Animal Kingdom on Monday and Hollywood Studios on Saturday.

It would make sense that weekends @ Disney are more crowded due to locals with AP's. We were at AK a few years ago during the week (can't recall the exact day) and it was wall-to-wall people. With those narrow walkways, you could barely move around. Fortunately, we have park hoppers so we gave up and went to Epcot instead which wasn't nearly as crowded.
 
When are you going? Did you factor in the Halloween parties in your park schedule? We have a similar vacation coming up in September - I'll give you our schedule to give you an idea.

Arriving on Monday - No parks
Tuesday - MK (Halloween party at night so have to leave by 6pm).
Wednesday - HS
Thursday - EPCOT
Friday - AK (also Halloween party this day - since some people avoid MK on those days we chose to go to AK as it closes early too and betting that most people might choose to go to HS or EPCOT instead. There is no science behind my theory, just a hunch haha).

We have hoppers too so on those early night we can finish the evening at a different park.

To answer your question directly, I would do HS on Monday and AK on Saturday :)
